François Pralus, established in Roanne in the Loire département, shows us around the workshops where his specialities are concocted: his marvellous praluline (a praline-filled brioche), the recipe for which was created by his father in 1955 and remains a closely guarded secret, and his range of chocolates made using cocoa beans roasted at the workshops… only three chocolate-makers in France still work in this way.
